While you may be trying to eat better and cut back on calories, sometimes it’s good to have a cheat day. For those of you not worried about such things, all we have to say is that this is one delicious and savory breakfast casserole. Be warned, however: this will fill you up well, but it may do that so well that instead of going on a hike afterward, you’ll just crawl back into your cot to digest!
One thing’s for sure; you don’t need much in your RV to make it and it doesn’t take long at all to prepare. It’ll also satisfy the hungriest of travel companions, including teenagers.
Crunchy Tater Tot Breakfast Casserole
- 2 lb. bacon
- 1 (30-32 oz) bag of frozen tater tots
- 1 (1 oz) package of Ranch dressing mix
- 2 cups of shredded cheddar cheese
- 8 eggs
- 2 cups of milk
Preheat oven to 350 degrees.In a large skillet, cook bacon. Chop cooked bacon into pieces.
In a large bowl, toss together tater tots, cooked bacon, and cheeses. Pour into a lightly greased 9×13-inch pan.
Whisk together eggs, Ranch mix, and milk. Pour over tater tot mixture (cover and refrigerate at this point if baking later).
Bake for 40 – 50 minutes, or until eggs are set.
